Oatmeal Chocolate Chip Cake

This cake is sooo good… and you can’t even detect that there’s oatmeal in it. I’ve been waiting to put this up for a long time, and I finally found it while packing up.

Ingredients:
1.75 cup boiling water
1 cup uncooked oatmeal (NOT quick or instant oats, the real stuff)
1 cup brown sugar
1 cup white sugar
.5 cup margarine/butter
2 large eggs
1 teaspoon soda
.5 teaspoon salt
1 tablespoon cocoa powder
1 12-oz. package of mini chocolate chips (semisweet or milk is your call)
9×13 backing pan
oven that goes up to 350F

Instructions
Pour boiling water over oatmeal and let stand for ten minutes. Then add brown sugar, white sugar, and margarine. Stir until the margarine melts. Add the eggs and mix well.

Sift together flour, soda, salt, and cocoa, then add to the mixture. Mix it up really well, then add about half the chocolate chips. Put the mixture into the pan (greased and floured, or otherwise made non-sticky). Sprinkle the remaining chocolate chips on the top (you don’t have to cover it completely, but it is pretty good that way too). Place it in the oven at 350F for about 40 minutes.

Let it cool, and you’re done! This is one of my favorite cakes. It’s not even that hard to make, which is good for clumsy people like me. :-)
